Akki Roti

A traditional Karnataka flatbread made with rice flour and flavoured with fresh herbs and spices, perfect for breakfast or a light meal.

Ingredients :

1. Rice flour 1 cup
3. Onion (finely chopped) 1 small
4. Green chillies (finely chopped) 2
5. Grated coconut 2 tbsp
6. Curry leaves (chopped) 1 tbsp
7. Fresh coriander leaves (chopped) 1 tbsp
8. Cumin seeds 1/2 tsp
9. Salt To taste
10. Water As needed
11. Oil For cooking

Procedure :

1. In a mixing bowl, combine rice flour, finely chopped onion, green chillies, grated coconut, curry leaves, coriander leaves, cumin seeds, and salt. Gradually add water to make a soft, pliable dough. Ensure the dough is not too sticky or too dry.
2. Divide the dough into small portions and roll them into balls. Place one ball on a greased plastic sheet or banana leaf and flatten it gently with your fingers to form a thin disc (roti). Wet your fingers to prevent sticking while flattening.
3. Heat a tawa over medium heat. Transfer the flattened roti carefully onto the hot tawa and cook for 2-3 minutes on one side until light brown spots appear.
4. Flip the roti and drizzle a little oil around the edges. Cook for another 2-3 minutes until both sides are golden brown and evenly cooked. Repeat for the remaining dough.
5. Serve hot with coconut chutney, tomato chutney, or a side of curd.
