Andhra Fish Fry

Andhra Fish Curry is a spicy, tangy fish curry from Andhra Pradesh in South India, made with tamarind and aromatic spices, perfect when paired with steamed rice.

Ingredients :

1. Mackerel fillet 250 grams
2. Tamarind Small lemon-sized ball
3. Water 1 1/2 cups
4. Onion 1 medium, finely chopped
5. Tomato 1 medium, chopped
6. Green chillies 1-2, slit
7. Ginger-garlic paste 1 tsp
8. Turmeric powder 1/4 tsp
9. Red chilli powder 1 tsp
10. Coriander powder 1 tsp
11. Fenugreek seeds (methi) 1/4 tsp
12. Mustard seeds 1/2 tsp
13. Curry leaves A few
14. Oil 1 tbsp
15. Salt To taste
16. Fresh coriander leaves For garnish

Procedure :

1. Soak tamarind in warm water for about 10 minutes, then extract the juice and discard the pulp.
2. In the Grill Pan, heat oil. Add mustard seeds and fenugreek seeds. Once they splutter, add curry leaves, chopped onion, and green chillies. Sauté until onions turn golden brown.
3. Add ginger-garlic paste and sauté until raw smell disappears. Add turmeric powder, red chilli powder, and coriander powder. Sauté for a few seconds, then add chopped tomatoes and cook until they soften.
4. Pour in the tamarind extract, salt, and a bit of water if needed. Bring to a boil, then reduce to a simmer for about 10 minutes to let the flavours develop.
5. Gently add the fish fillets to the curry and cook for about 5-7 minutes until the fish is tender and fully cooked. Garnish with fresh coriander leaves and serve hot.
