Baingan ka Bharta

A rustic North Indian favourite made with roasted brinjal mashed and blended with onion, tomato, and spices. Simple, smoky, and full of flavour.

Ingredients :

1. 1 large brinjal (baingan), roasted and peeled
2. 1 tbsp oil
3. 1 tsp cumin seeds
4. 1 green chilli (finely chopped)
5. 1 inch ginger (grated)
6. 1 small onion (finely chopped)
7. 1 small tomato (finely chopped)
8. ½ tsp turmeric powder
9. 1 tsp red chilli powder
10. Salt to taste
11. 2 tbsp fresh coriander (chopped)
12. 1 tsp lemon juice (optional)

Procedure :

1. Roast the brinjal directly on flame or in an oven until charred and soft. Cool, peel, and mash well.
2. Switch on Sauté Mode in the MultiCook and heat oil.
3. Add cumin seeds and let them splutter.
4. Add green chilli and ginger. Sauté for a few seconds.
5. Add chopped onion and cook until golden.
6. Add tomatoes, turmeric, red chilli powder, and salt. Cook until tomatoes soften and masala releases oil.
7. Add the mashed brinjal and mix well into the masala.
8. Cook for 4–5 minutes while stirring occasionally.
9. Add lemon juice (if using) and fresh coriander.
10. Serve hot with roti, paratha, or rice.
