What You'll Need
Bhuna Mutton
A dry, intensely flavoured mutton curry where the meat is slow-cooked in a thick, roasted masala. Perfect for indulgent meals with naan or paratha.
Ingredients :
1. 500 g mutton (bone-in, curry cut)
2. 2 tbsp oil or ghee
3. 1 bay leaf
4. 2–3 cloves
5. 1 black cardamom
6. 1 small cinnamon stick
7. 2 medium onions (thinly sliced)
8. 1 tbsp ginger-garlic paste
9. 2 medium tomatoes (finely chopped or puréed)
10. ½ tsp turmeric powder
11. 1½ tsp red chilli powder
12. 1½ tsp coriander powder
13. 1 tsp garam masala
14. Salt to taste
15. Fresh coriander for garnish
16. ½ tsp kasuri methi (optional)
17. ¼ cup water
Procedure :
1. Switch on Sauté Mode in the MultiCook. Heat oil/ghee and add bay leaf, cloves, cinnamon, and black cardamom.
2. Add sliced onions and sauté until deeply golden brown (don’t rush this step).
3. Add ginger-garlic paste and sauté for 1 minute until fragrant.
4. Add tomatoes, turmeric, chilli powder, coriander powder, and salt. Cook until the masala thickens and oil begins to separate.
5. Add mutton and mix well to coat with the masala. Sauté for 5–6 minutes until slightly browned.
6. Add ¼ cup water. Cancel Sauté Mode. Close the lid and select the ‘Mutton Curry’ preset.
7. Let the pressure release naturally. Open the lid and stir the curry.
8. Switch back to Sauté Mode and bhuno (dry roast) the mutton for 6–8 minutes, stirring occasionally, until thick and well-coated.
9. Add garam masala and kasuri methi. Mix and cook for 1 minute.
10. Garnish with coriander and serve hot with roti, paratha, or jeera rice.
