Broccoli Almond Soup

A rich and nutritious soup made with tender broccoli and almonds, perfectly blended with subtle spices, all in one pot.

Ingredients :

1. 1 cup broccoli florets (chopped small)
2. 10–12 almonds (blanched & chopped)
3. 1 small onion (finely chopped)
4. 2 garlic cloves (minced)
5. 1 tbsp butter or olive oil
6. 1 cup milk
7. 1 cup water or vegetable stock
8. ½ tsp black pepper
9. Salt to taste
10. ½ tsp mixed herbs (optional)
11. 1 tbsp cream (optional)

Procedure :

1. Switch on Sauté mode in the MultiCook. Add butter or oil.
2. Sauté onions and garlic for 2–3 minutes until soft.
3. Add broccoli florets and chopped almonds. Stir-fry for 2 minutes.
4. Pour in water or vegetable stock, add salt, pepper, and mixed herbs.
5. Cancel Sauté mode, close the lid, and select Soup function (10 minutes).
6. After cooking, open the lid and stir in milk.
7. Use a ladle to mash the broccoli slightly (for a chunky texture).
8. Add cream (if using) and stir well.
9. Serve hot, garnished with a few almond slivers.
