Chawal ki Kheer

A classic Indian rice pudding made with milk, sugar, and aromatic cardamom — slow-cooked to creamy perfection in the MultiCook.

Ingredients :

1. ¼ cup basmati rice (rinsed and soaked for 15 mins)
2. 1 litre full-fat milk
3. ¼ cup sugar (adjust to taste)
4. 4–5 saffron strands (optional)
5. ¼ tsp cardamom powder
6. 1 tbsp chopped cashews and almonds
7. 1 tsp ghee

Procedure :

1. Switch on Sauté mode in the MultiCook. Add ghee and lightly roast chopped nuts. Remove and set aside.
2. Add soaked rice and milk to the inner pot. Stir gently.
3. Cancel Sauté mode and select the Slow Cook function.
4. Let it cook for 25–30 minutes, stirring once midway.
5. Once the rice softens and the mixture thickens, add sugar, cardamom powder, and saffron strands.
6. Mix well and let it sit for 5 minutes on Keep Warm mode.
7. Top with roasted nuts.
8. Serve warm or chilled.
