Chilli Cheese Aloo Bonda

Aloo Bonda is a popular Indian snack made with chilli cheese mashed potatoes coated in a crispy chickpea flour batter and deep-fried.

Ingredients :

For The Filling

1. Potatoes 4 4 medium-sized, boiled and mashed
2. Oil 1 tbsp
3. Mustard seeds 1 tsp
4. Cumin seeds 1 tsp
5. Green chillies (finely chopped) 2
6. Ginger (grated or finely chopped) 1 small size
7. Curry leaves 5 leaves
8. Turmeric powder 1/4 tsp
9. Red chilli powder 1/2 tsp
10. Processed cheese or mozzarella 50 gm (grated)
11. Salt To taste
12. Fresh coriander leaves (chopped) 1 tbsp
13. Lemon juice 1 tbsp


For the Outer Batter
1 Besan (gram flour) 1 cup
2 Rice flour (optional, for crispiness) 2 tbsp
3 Baking soda 1/4 tsp
4 Red chili powder 1/4 tsp
5 Asafoetida (hing) A pinch
6 Salt To taste
7 Water As required
8 Oil For frying

Procedure :

1. Heat oil in a pan, add mustard seeds, cumin seeds, and curry leaves. When they splutter, add chopped green chillies, ginger, and sauté for a minute. Add turmeric powder, red chilli powder, Mix well. Add the boiled, mashed potatoes, salt, and mix until combined. Add fresh coriander leaves and lemon juice, then set the mixture aside to cool. Once cooled mix in the grated cheese.
2. Prepare the outer batter: In a bowl, combine besan, rice flour (optional), red chilli powder, baking soda, salt, and a pinch of hing. Add water gradually to make a thick batter that can coat the potato balls.
3. Heat oil in a Casserole over medium heat. Test the oil by dropping a small amount of batter; it should rise immediately. Dip each potato ball into the batter, coating it evenly. Carefully drop it into the hot oil. Fry in batches, turning occasionally, until golden brown and crisp.
4. Remove the bondas from the oil and drain excess oil on paper towels. Serve hot with chutney or ketchup.
