Chilli Paneer Dosa Roll

A crispy dosa roll stuffed with spicy chilli paneer, served with chilli sauce.

Ingredients :

Dosa Batter
1. Rice 300 g
2. Urad Dal 75 g
3. Salt 1/2 tsp
4. Sugar 1/2 tsp

Chilli Paneer
1. Paneer (cubes) 50 g
2. Onion (chopped) 1 medium
3. Capsicum (chopped) 1 medium
4. Green chillies (finely chopped) 1 tsp
5. Ginger-garlic paste 1 tsp
6. Soy sauce 1 tsp
7. Vinegar 1 tsp
8. Red chilli powder 1/2 tsp
9. Salt 1/2 tsp
10. Oil 2 tsp
11. Spring onions (chopped, for garnish) 1/2 tsp

Procedure :

1. Wash and soak the rice and dal overnight, blend with salt and sugar. Make a thick and smooth batter. Ferment the batter in a warm area for 8-10 hours.
2. Heat 1 tbsp oil in a Grill Pan. Add finely chopped onions, capsicum, and green chillies, and sauté for a couple of minutes until they soften. Add ginger-garlic paste and sauté for another minute until the raw smell disappears. Add soy sauce, vinegar, red chili powder, and salt. Stir well. Add cubed paneer and toss gently to coat with the spices. Cook for 2-3 minutes, allowing the flavours to mix well. Set the filling aside
3. Heat a Dosa Tawa to a medium heat, splash with oil & water. Spread the dosa batter on the dosa tawa in a perfect circle, let it get golden brown. Place a spoonful of the mushroom masala filling in the center of the dosa. Roll the dosa from one side over the filling, creating a rolled shape.
4. Serve it on a plate with chilli sauce.
