Citrus Sambhar

Citrus Sambar is a tangy twist on the classic South Indian sambar, made with fresh oranges, lending a zesty flavour to the lentil-based curry.

Ingredients :

1. Toor dal (yellow lentils) 1/4 cup
2. Tamarind 1 small lemon-sized ball
3. Orange 2 tbsp cubes
4. Carrot 2 tbsp cubes
5. Pumkin 2 tbsp cubes
6. Beans 2 tbsp chopped
7. Yam 2 tbsp cubes
8. Brinjal 2 tbsp cubes
9. Drumstick 1 no
10. Shallots 2 tbsp chopped
11. Tomato 1 medium, chopped
12. Bora Chilli 4 no
13. Ginger-garlic paste 1 tsp
14. Sambar powder 1 tbsp
15. Turmeric powder 1/4 tsp
16. Curry leaves A few
17. Mustard seeds 1/2 tsp
18. Coconut oil 1 tbsp
19. Salt To taste
20. Fresh coriander leaves For garnish

Procedure :

1. In a Pressure Cooker, cook toor dal with 1 cup of water until soft and mushy. Set aside.
2. Soak the tamarind in warm water for 10 minutes, then extract the juice and discard the pulp.
3. In a Casserole, heat oil and add mustard seeds. Once they splutter, add curry leaves, chopped onion, green chilli, and ginger-garlic paste. Sauté until onions turn golden, then add chopped tomato and cook until soft.
4. Add mixed vegetables, turmeric powder, sambar powder, and tamarind extract and orange plup. Add water as needed, and simmer for 5-7 minutes until the vegetables are cooked.
5. Add the cooked dal to the vegetable mixture. Stir well and bring it to a boil. Add salt and orange zest. Garnish with fresh coriander leaves and serve hot.
