Creamy Alfredo Pasta

A rich and creamy Italian pasta cooked in a luscious white sauce with garlic and cheese, made effortlessly in the MultiCook.

Ingredients :

1. 1 cup pasta of choice
2. 1 cup milk
3. ½ cup water or vegetable stock
4. 1 tbsp butter
5. 2 garlic cloves (minced)
6. ¼ cup bell peppers (sliced)
7. ¼ cup broccoli florets (blanched)
8. 2 tbsp black olives (sliced)
9. 2 tbsp fresh cream
10. 2 tbsp grated parmesan or processed cheese
11. ¼ tsp black pepper (freshly crushed)
12. ¼ tsp chili flakes (optional)
13. ½ tsp mixed herbs or oregano
14. Salt to taste
15. Fresh basil leaves (for garnish)

Procedure :

1. Add pasta, water/stock, and a pinch of salt to the MultiCook. Close the lid and select Manual mode for 6–8 minutes (depending on pasta type).
2. While pasta is cooking, blanch the broccoli in a separate bowl by soaking it in hot water for 2–3 minutes. Drain and keep aside.
3. Once pasta is done, remove it from the MultiCook and set aside (reserve ¼ cup pasta water).
4. Switch on Sauté mode. Add butter and garlic; sauté for 1 minute.
5. Add bell peppers and sauté for 1–2 minutes.
6. Pour in milk, cream, black pepper, chili flakes, and mixed herbs. Stir well and simmer for 2 minutes.
7. Add cooked pasta, blanched broccoli, olives, and a splash of reserved pasta water. Toss everything together.
8. Mix in the grated cheese until it melts into a creamy sauce. Adjust salt if needed.
9. Garnish with fresh basil leaves and serve hot.
