What You'll Need
Dhaba Dal Tadka
Thick, smoky, and packed with flavour — this dal combines toor, chana, and urad with a bold, ghee-loaded tadka just like you’d get at a North Indian highway dhaba.
Ingredients :
For Dal:
1. ¼ cup toor dal
2. ¼ cup chana dal
3. 2 tbsp split urad dal (without skin)
4. 1 small tomato (chopped)
5. ¼ tsp turmeric powder
6. 1 tsp salt (adjust to taste)
7. 3 cups water
For Tempering:
8. 1½ tbsp ghee or oil
9. 1 tsp cumin seeds
10. 4–5 garlic cloves (sliced)
11. 1 green chilli (slit)
12. 1 small onion (finely chopped)
13. ½ tsp red chilli powder
14. ¼ tsp garam masala
15. 1 tsp kasuri methi (crushed)
16. Chopped coriander for garnish
17. Optional: 1 tsp butter or cream for extra richness
Procedure :
1. Wash and soak all three dals together for 30 minutes.
2. Add soaked dals, tomato, turmeric, salt, and water into the MultiCook.
3. Close the lid and select the 'Dal' preset.
4. Let the MultiCook complete cooking. Allow the pressure to release naturally.
5. Open the lid and mash the dal slightly for a thick consistency. Keep it on Keep Warm mode.
6. In a separate pan, heat ghee. Add cumin seeds and sliced garlic. Let them turn golden.
7. Add green chilli and chopped onion. Sauté until golden brown.
8. Add red chilli powder, garam masala, and kasuri methi. Stir quickly.
9. Pour the hot tadka into the dal and stir well. Add butter or cream if using.
10. Garnish with coriander and serve hot with jeera rice or paratha.
