Egg Masala Fried Rice
A spicy, street-style fried rice tossed with fluffy scrambled eggs, vegetables, and bold Indian masalas — ready in minutes using the Sauté mode.
Ingredients :
1. 2 eggs
2. 1 tbsp oil
3. 1 small onion (finely chopped)
4. ½ cup mixed veggies (capsicum, carrot, beans – finely chopped)
5. 1 green chilli (slit)
6. 1 tsp ginger-garlic paste
7. ½ tsp red chilli powder
8. ½ tsp garam masala
9. 1½ cups cooked rice (preferably leftover, cooled)
10. Salt to taste
11. Fresh coriander or spring onion greens for garnish
12. 1 tsp soy sauce (optional)
Procedure :
1. Switch on Sauté / Bhuna Mode in the MultiCook. Heat oil.
2. Crack the eggs directly into the pot. Scramble and cook until just set. Remove and keep aside.
3. In the same pot, add onions and sauté for 1–2 minutes.
4. Add green chilli, ginger-garlic paste, and chopped vegetables. Sauté for 2–3 minutes.
5. Add chilli powder, garam masala, and salt. Mix well.
6. Add cooked rice and toss gently to combine with the masala.
7. Stir in scrambled eggs and soy sauce (if using). Mix well.
8. Cook for another 2 minutes until everything is heated through.
9. Garnish with coriander or spring onions.
10. Serve hot with ketchup or curd.
