Ghee Podi Khara Bath
Podi Upma is a South Indian savoury dish made with semolina, mixed with spiced lentil powder and ghee.
Ingredients :
1. Semolina (Rava/Sooji) 1 cup
2. Ghee 2 tbsp
3. Mustard seeds 1 tsp
4. Urad dal (split black gram) 1 tsp
5. Chana dal (split chickpeas) 1 tsp
6. Curry leaves 8 leaves
7. Green chillies 2 slit
8. Grated ginger 2 pcs
9. Water 2 cups
10. Salt To Taste
11. Podi (gunpowder) 2 tbsp
12. Cashews (optional) 5
Procedure :
1. Heat 1-2 tbsp ghee in a casserole on medium heat. Add mustard seeds and let them splutter. Add urad dal, chana dal, and fry until golden brown. Add curry leaves, green chilies, and grated ginger, sauté for a minute. Add the semolina (rava) and roast it in ghee for 3-4 minutes until it turns light golden.
2. In a separate pot, bring 2 cups of water to a boil.
3. Pour the boiling water into the roasted semolina mixture carefully, stirring constantly. Add salt to taste, cover, and cook for 2-3 minutes, allowing the water to absorb. Once the water is absorbed, add 1-2 tbsp of podi (gunpowder) and mix well.
4. Stir in the remaining ghee and optional cashews, then serve hot.
