What You'll Need
Ghee Ragi Dosa
A crispy and healthy dosa made with ragi (finger millet) flour, cooked with a drizzle of ghee, and served with coconut chutney.
Ingredients :
Dosa Batter
1. Ragi flour 1 cup
2. Rice flour 1/2 cup
3. Curd 1/4 cup
4. Water 1 cup (adjust as needed)
5. Salt 1/2 tsp
For Cooking
1. Ghee 2 tbsp
2. Oil 1 tbsp
Coconut Chutney
1. Grated coconut 50 g
2. Green chilli 1, slit
3. Tamarind 1/2 tsp
4. Curry leaves 1/2 tsp
5. Mustard seeds 1/2 tsp
6. Salt 1/2 tsp
7. Water 50 ml
Procedure :
1. In a mixing bowl, combine ragi flour, rice flour, curd, salt, and water. Mix well to form a smooth, lump-free batter with a consistency similar to regular dosa batter. Let it rest for 20-30 minutes.
2. For the coconut chutney, blend grated coconut, green chilli, tamarind, and water to a coarse consistency. Heat oil in a small pan, add mustard seeds and curry leaves, and temper the chutney by mixing the hot seasoning into it.
3. Heat a Dosa Tawa over medium heat and lightly grease it with oil. Pour a ladleful of the ragi dosa batter onto the tawa and spread it in a circular motion to form a thin layer.
4. Drizzle 1-2 tsp of ghee around the edges and on top of the dosa. Cook until the edges turn golden brown and the dosa becomes crispy. Carefully lift the dosa using a spatula. Fold it into a half-moon or roll it as per your preference.
5. Serve the ghee ragi dosa hot with the prepared coconut chutney for a nutritious and delicious meal.
