Ghee Roast Chicken
A spicy delicacy from Mangalorean cuisine in Karnataka, India, featuring chicken marinated and cooked in a flavorful blend of spices and ghee.
Ingredients :
1. Chicken (boneless pieces) 250 grams
2. Ghee 2 tbsp
3. Yogurt 2 tbsp
4. Lemon juice 1/2 tsp
5. Salt To taste
6. Turmeric powder 1/4 tsp
7. Curry leaves A few
8. Coriander leaves For garnish
For Ghee Roast Masala Paste
1. Dried red chillies 4 nos
2. Black peppercorns 1/2 tsp
3. Cumin seeds 1/2 tsp
4. Coriander seeds 1 tsp
5. Garlic cloves 3 nos
6. Tamarind pulp 1/2 tsp
Procedure :
1. In a bowl, mix yogurt, lemon juice, salt, and turmeric powder. Add the chicken pieces and coat well. Set aside to marinate for at least 15 minutes.
2. Dry roast the dried red chillies, black peppercorns, cumin seeds, and coriander seeds on a grill pan over low heat until aromatic. Blend them with garlic and tamarind pulp into a smooth paste using a little water if needed.
3. In Grill Pan, heat 1 tablespoon of ghee. Add the marinated chicken and cook until slightly golden and partially cooked. Remove and set aside.
4. In the same pan, add the remaining ghee, curry leaves, and the prepared spice paste. Sauté until the ghee separates from the paste and it turns aromatic.
5. Add the seared chicken to the pan and mix well. Cook on low heat until the chicken is fully cooked and coated with the spice paste. Garnish with coriander leaves and serve hot.
