Goli Baje

Goli Baje, also known as Mangalore Bonda, is a crispy, soft, and savoury deep-fried fritter from Mangalore.

Ingredients :

1. All-purpose flour 1 cup
2. Rice flour 2 tbsp
3. Rava (semolina) 2 tbsp
4. Baking soda 1/4 tsp
5. Baking powder 1/2 tsp
6. Yogurt 2 tbsp
7. Sugar 1 tsp
8. Salt 1/2 tsp
9. Warm water 1/2 cup
10. Cumin seeds 1/2 tsp
11. Ginger 1 tsp
12. Green chilli 1 slit
13. Fresh curry leaves 5 leaves
14. Oil For frying

Procedure :

1. In a large mixing bowl, combine all-purpose flour, rice flour, rava, baking soda, and baking powder. Add yogurt, sugar, salt, cumin seeds, grated ginger, chopped green chilli, curry leaves. Mix all the dry ingredients and spices. Then, gradually add warm water and knead into a soft, slightly sticky dough. Cover the dough with a damp cloth and let it rest for 30-45 minutes in a warm place.
2. After resting, check the dough; it should be soft and elastic. If needed, add a little more water or flour to adjust the consistency. Heat oil in a Casserole on medium heat. To test if the oil is ready, drop a small portion of dough; it should rise to the surface quickly.
3. Pinch small portions of dough and roll them into smooth balls (size of a small marble or about 1 inch in diameter). Gently drop the dough balls into the hot oil and fry in batches, turning them occasionally to ensure even cooking.
4. Fry until they turn golden brown and crispy on all sides (about 3-4 minutes). Remove the fried Goli Baje using a slotted spoon and drain excess oil on paper towels. Serve hot with coconut chutney.
