Gujarati Kadhi

A light, slightly sweet curd-based dish made with besan and tempered spices — a soothing Gujarati classic that pairs perfectly with khichdi or steamed rice.

Ingredients :

For Kadhi Base:
1. 1 cup curd (preferably sour)
2. 2 tbsp besan (gram flour)
3. 2½ cups water
4. 1 tbsp sugar or jaggery
5. ½ tsp turmeric powder
6. 1 tsp grated ginger
7. Salt to taste

For Tempering:
8. 1 tbsp ghee
9. ½ tsp mustard seeds
10. ½ tsp cumin seeds
11. 1 pinch hing (asafoetida)
12. 1–2 dried red chillies
13. 6–8 curry leaves
14. 2 cloves (optional)
15. 1 small cinnamon stick (optional)
16. Coriander for garnish

Procedure :

1. In a mixing bowl, whisk curd, besan, water, sugar, turmeric, ginger, and salt until smooth.
2. Pour the kadhi mixture into the MultiCook.
3. Close the lid and select Manual Mode → set to 10 minutes on low pressure.
4. Let the MultiCook complete cooking. Allow pressure to release naturally.
5. Open the lid and stir well. Keep on Keep Warm mode.
6. In a small pan, heat ghee for tempering.
7. Add mustard seeds, cumin seeds, hing, red chillies, curry leaves, cloves, and cinnamon. Let them splutter.
8. Pour the tempering over the kadhi and mix gently.
9. Garnish with chopped coriander.
10. Serve hot with steamed rice or moong dal khichdi.
