Hyderabadi Veg Biryani

Aromatic basmati rice layered with spiced vegetables, herbs, and saffron milk — cooked together in one pot for a simplified take on a festive favourite.

Ingredients :

1. 1 cup basmati rice (washed and soaked for 20 mins)
2. 1 tbsp ghee or oil
3. 1 bay leaf
4. 2 cloves
5. 1 small cinnamon stick
6. 1 green cardamom
7. 1 small onion (thinly sliced)
8. 1 cup mixed vegetables (carrot, beans, peas, potato)
9. ½ cup yoghurt
10. 1 tbsp ginger-garlic paste
11. 1 tsp red chilli powder
12. ½ tsp turmeric powder
13. 1 tsp biryani masala or garam masala
14. Salt to taste
15. 2 tbsp chopped coriander
16. 2 tbsp chopped mint leaves
17. 1½ cups water
18. Few saffron strands soaked in 2 tbsp warm milk (optional)

Procedure :

1. Switch on Sauté Mode in the MultiCook. Add ghee or oil.
2. Add bay leaf, cloves, cinnamon, and cardamom. Sauté for 30 seconds.
3. Add sliced onion and sauté until golden.
4. Add ginger-garlic paste and cook for 1 minute.
5. Add chopped vegetables, salt, turmeric, red chilli, biryani masala, and yoghurt. Mix well and cook for 2–3 minutes.
6. Add soaked rice, coriander, mint, and water. Stir gently.
7. Pour saffron milk on top (optional). Do not stir.
8. Cancel Sauté Mode. Close the lid and press the 'Biryani' button on the MultiCook.
9. Let pressure release naturally. Open lid and fluff the rice with a fork.
10. Serve hot with raita or salan.
