Italian Minestrone Soup
Italian Minestrone Soup A hearty Italian soup loaded with seasonal vegetables, beans, pasta, and herbs simmered in a rich tomato broth, a wholesome meal in a bowl.
Ingredients :
1. 1 tbsp olive oil
2. 2 garlic cloves (minced)
3. 1 small onion (finely chopped)
4. 1 carrot (diced)
5. ½ cup zucchini (diced)
6. ½ cup French beans (chopped)
7. ½ cup cabbage (shredded)
8. ½ cup boiled kidney beans or white beans
9. ½ cup small pasta (like macaroni)
10. 1 small tomato (chopped)
11. 2 tbsp tomato puree
12. 1 tsp Italian seasoning or mixed herbs
13. ¼ tsp black pepper (freshly crushed)
14. Salt to taste
15. 3 cups water or vegetable stock
16. 2 tbsp fresh parsley or basil (for garnish)
17. 1 tbsp grated parmesan (optional)
Procedure :
1. Switch on Sauté mode in the MultiCook. Add olive oil, garlic, and onions. Sauté for 2 minutes.
2. Add carrots, zucchini, beans, and cabbage. Stir-fry for 2–3 minutes.
3. Add chopped tomatoes, tomato puree, Italian seasoning, black pepper, and salt. Cook for 2 minutes.
4. Pour in water or vegetable stock and add boiled beans. Cancel Sauté mode.
5. Close the lid and select Soup function (10 minutes).
6. After the soup base is done, add pasta and switch to Sauté mode. Let pasta cook in the hot broth for 4–5 minutes until al dente.
7. Garnish with fresh parsley or basil. Add parmesan if desired and serve hot.
