Mangalore Buns
Mangalore Buns are soft, slightly sweet fried bread made with ripe bananas, served as a popular breakfast or snack in coastal Karnataka.
Ingredients :
1. All-purpose flour (maida) 2 cups
2. Ripe bananas (mashed) 1 large
3. Yogurt 2 tbsp
4. Sugar 1 tbsp
5. Salt 1/2 tsp
6. Baking powder 1/2 tsp
7. Baking soda 1/4 tsp
8. Ghee 1 tbsp
9. Warm water 1/4 cups
10. Oil For frying
Procedure :
1. In a large bowl, mash the ripe banana well. Add yogurt, sugar, salt, and ghee to the mashed banana, and mix well. Sift the flour, baking powder, and baking soda together in another bowl. Gradually add the sifted dry ingredients to the wet mixture, kneading into a smooth dough.
2. If the dough is too sticky, add a little more flour, and if it's dry, add a bit of warm water. Cover the dough with a damp cloth and let it rest for 1-2 hours (fermentation). After resting, divide the dough into small balls.
3. Roll each ball into a thick disc (about 1/4 inch thick), using a little flour to prevent sticking.
4. Heat oil in a Casserole over medium heat. Fry the rolled discs one at a time in the hot oil until they puff up and turn golden brown. Remove and drain on paper towels. Serve the Mangalore Buns hot with coconut chutney.
