Mixed Vegetable Soup

A light, wholesome soup made with everyday vegetables, perfect for a comforting appetiser or a light evening meal. Nutritious, flavourful, and easy to prepare in your MultiCook.

Ingredients :

1. 1 tbsp oil or butter
2. 1 tsp garlic (finely chopped)
3. 1 small onion (finely chopped)
4. ½ cup carrot (finely chopped)
5. ½ cup beans (finely chopped)
6. ½ cup cabbage (shredded)
7. ¼ cup capsicum (finely chopped)
8. ½ cup broccoli florets
9. 1½ tbsp cornflour mixed in ¼ cup water (optional – for thickness)
10. 3 cups water or vegetable stock
11. Salt to taste
12. ½ tsp black pepper
13. ½ tsp soy sauce (optional)
14. Chopped spring onions for garnish (optional)

Procedure :

1. Switch on Sauté Mode in the MultiCook. Add oil or butter and let it heat.
2. Add chopped garlic and onion. Sauté for 1–2 minutes until soft.
3. Add all the chopped vegetables, including broccoli. Stir and sauté for another 2–3 minutes.
4. Pour in water or stock. Add salt, pepper, and soy sauce (if using).
5. Cancel Sauté mode. Close the lid and select the 'Soup' preset.
6. Let the MultiCook complete the cooking. It will automatically switch to Keep Warm mode when done.
7. Once pressure releases naturally, open the lid.
8. If you prefer a thicker soup, switch to Sauté mode, add cornflour slurry, and simmer for 2 minutes until it thickens slightly.
9. Serve hot, garnished with spring onions.
