Mushroom Chettinad
Mushroom Chettinad is a spicy, aromatic South Indian curry made with mushrooms cooked in a rich blend of Chettinad spices and coconut.
Ingredients :
1. Mushrooms (sliced) 200 grams
2. Onion (finely chopped) 1 medium
3. Tomato (chopped) 1 medium
4. Green chillies 1-2, slit
5. Ginger-garlic paste 1 tsp
6. Curry leaves A few
7. Oil 1 tbsp
8. Salt To taste
Chettinad Spice Paste
1. Dried red chillies 5 pcs
2. Black peppercorns 1/2 tsp
3. Cumin seeds 1/2 tsp
4. Coriander seeds 1 tsp
5. Fennel seeds 1/2 tsp
6. Cinnamon 1 small stick
7. Cloves 2-3
8. Cardamom 1-2
9. Fresh grated coconut 1/4 cup
Procedure :
1. Dry roast the dried red chillies, black peppercorns, cumin seeds, coriander seeds, fennel seeds, cinnamon, cloves, and cardamom in a pan on low heat until aromatic. Blend this with grated coconut into a smooth paste using a little water.
2. Heat oil in a Casserole. Add curry leaves, chopped onions, and green chillies. Sauté until onions turn golden brown, then add ginger-garlic paste and cook until fragrant.
3. Add chopped tomatoes to the pan and cook until they soften and release oil.
4. Add the sliced mushrooms and sauté for a couple of minutes. Then, add the prepared Chettinad spice paste, salt, and a little water. Stir well and cook for 5 -7 minutes until the mushrooms are tender and the flavours blend.
5. Garnish with fresh coriander leaves and serve hot with rice or roti.
