Palak & Moong Dal Khichdi

A comforting khichdi made with yellow moong dal, spinach, and rice — perfect for everyday meals that are easy to digest yet full of flavour and nutrition.

Ingredients :

1. 1 cup basmati rice (washed and soaked for 20 mins)
2. 1 tbsp ghee or oil
3. 1 bay leaf
4. 2 cloves
5. 1 small cinnamon stick
6. 1 green cardamom
7. 1 small onion (thinly sliced)
8. 1 cup mixed vegetables (carrot, beans, peas, potato)
9. ½ cup yoghurt
10. 1 tbsp ginger-garlic paste
11. 1 tsp red chilli powder
12. ½ tsp turmeric powder
13. 1 tsp biryani masala or garam masala
14. Salt to taste
15. 2 tbsp chopped coriander
16. 2 tbsp chopped mint leaves
17. 1½ cups water
18. Few saffron strands soaked in 2 tbsp warm milk (optional)

Procedure :

1. Switch on Sauté Mode in the MultiCook. Heat ghee or oil.
2. Add cumin seeds and hing. Let them splutter.
3. Add onion, green chilli, and ginger. Sauté for 2 minutes.
4. Add spinach and cook until wilted.
5. Add turmeric, washed moong dal, soaked rice, and salt. Mix well.
6. Pour in water and stir. Cancel Sauté Mode.
7. Close the lid and press the 'Khichdi' button on the MultiCook.
8. Let cooking complete and allow pressure to release naturally.
9. Open the lid and mix gently. Adjust consistency if needed.
10. Serve hot with a drizzle of ghee or lemon juice.
