What You'll Need
Palak Paneer
Soft paneer cubes simmered in a mildly spiced spinach gravy — rich in flavour and nutrition. A timeless favourite in Indian households.
Ingredients :
For Spinach Base:
1. 250 g spinach (washed and roughly chopped)
2. 1 green chilli
3. 1 cup water
For Gravy:
4. 200 g paneer (cubed)
5. 1 tbsp oil or ghee
6. 1 tsp cumin seeds
7. 1 small onion (finely chopped)
8. 1 tsp ginger-garlic paste
9. 1 small tomato (chopped or puréed)
10. ½ tsp turmeric powder
11. 1 tsp red chilli powder
12. ½ tsp garam masala
13. Salt to taste
14. 2 tbsp fresh cream (optional)
Procedure :
1. Add spinach, green chilli, and water to the MultiCook. Close the lid and select Manual mode → 2 minutes on Low Pressure.
2. Once done, quick release pressure and open the lid. Blend the spinach using a hand blender and keep aside.
3. Switch on Sauté Mode. Heat oil or ghee and add cumin seeds. Let them splutter.
4. Add onions and sauté until golden. Add ginger-garlic paste and cook for 1 minute.
5. Add tomatoes, turmeric, chilli powder, and salt. Cook till the masala thickens.
6. Add the blended spinach and garam masala to the cooked masala. Mix and simmer for 3–4 minutes.
7. Gently add paneer cubes. Simmer for another 2–3 minutes until heated through.
8. Stir in cream if using, and mix gently (do not boil after adding cream).
9. Adjust consistency with a little water if needed.
10. Serve hot with naan, roti, or jeera rice.
