What You'll Need
Pav Bhaji
A vibrant, spiced vegetable mash served with butter-toasted pav — Mumbai’s iconic street food made healthier and easier at home.
Ingredients :
1. 1 tbsp butter or oil
2. ½ tsp cumin seeds
3. 1 small onion (finely chopped)
4. 1 green chilli (finely chopped)
5. 1 tsp ginger-garlic paste
6. 2 tomatoes (finely chopped or puréed)
7. ½ cup boiled and mashed potatoes
8. ½ cup finely chopped capsicum
9. ½ cup boiled green peas
10. ½ cup boiled and chopped carrots
11. 1½ tsp pav bhaji masala
12. ½ tsp red chilli powder
13. ½ tsp turmeric powder
14. Salt to taste
15. ½ cup water
16. 1 tbsp butter (for finishing)
17. Lemon wedges and coriander for garnish
18. Pav buns (to serve)
Procedure :
1. Switch on Sauté mode in the MultiCook. Add butter and let it melt.
2. Add cumin seeds, then onion and green chilli. Sauté till onions turn soft.
3. Add ginger-garlic paste and cook for 1 minute.
4. Add tomatoes and cook until soft and oil starts to separate.
5. Add turmeric, red chilli powder, pav bhaji masala, and salt. Mix well.
6. Add boiled potatoes, peas, carrots, and capsicum. Mix everything together.
7. Pour in water and mash everything gently using a masher inside the pot.
8. Let it cook for 6–8 minutes, stirring occasionally to avoid sticking.
9. Add butter on top, mix well, and cancel Sauté mode.
10. Garnish with coriander and lemon. Serve hot with butter-toasted pav.
