Paya Soup
A traditional slow-cooked mutton trotter broth, made faster in the MultiCook without losing its signature depth. Nourishing, protein-rich, and deeply comforting.
Ingredients :
1. 4–5 mutton trotters (paya), cleaned
2. 1 tbsp oil or ghee
3. 1 small onion (finely chopped)
4. 1 tbsp ginger-garlic paste
5. ½ tsp turmeric powder
6. ½ tsp black pepper powder
7. ½ tsp cumin powder
8. Salt to taste
9. 1 tbsp chopped coriander
10. 4 cups water
11. ½ tsp garam masala (for finishing)
12. 1 tsp lemon juice (optional)
Procedure :
1. Switch on Sauté Mode in the MultiCook. Add oil or ghee.
2. Add chopped onion and sauté until golden brown.
3. Add ginger-garlic paste. Cook for 1–2 minutes until the raw smell disappears.
4. Add turmeric, pepper, cumin, and salt. Stir well.
5. Add cleaned mutton trotters (Paya) and mix to coat them with the masala.
6. Pour in water and stir everything together.
7. Cancel sauté mode. Close the lid and select the ‘Mutton Curry’ preset.
8. Once the cycle completes, allow pressure to release naturally.
9. Open the lid, add garam masala and lemon juice. Simmer in Sauté Mode for 2–3 minutes if needed.
10. Garnish with chopped coriander and serve hot.
