Pineapple Kesari Bath

A fragrant and sweet semolina dessert infused with pineapple, ghee, and cardamom, combining tropical and traditional flavours.

Ingredients :

1. Semolina (rava) 1 cup
2. Pineapple (chopped) 1 cup
3. Sugar 3/4 cup
4. Ghee 3 tbsp
5. Water 1 1/2 cup
6. Milk 1/2 cup
7. Cashews 12 pcs
8. Raisins 10 pcs
9. Cardamom powder A pinch tsp
10. Saffron strands 4 pcs
11. Salt A pinch

Procedure :

1. Heat 1 tablespoon of ghee in a casserole, and fry the cashews and raisins until golden brown. Remove and set aside. In the same pan, add another tablespoon of ghee and sauté the chopped pineapple for 3-4 minutes until softened and juicy. Add 1 1/2 cups of water and 1/2 cup of milk to the casserole with the pineapple and bring it to a boil.
2. Once the mixture starts boiling, add a pinch of salt. Gradually add the semolina while stirring continuously to avoid lumps. Lower the heat and cook the semolina mixture, stirring constantly, until it absorbs the liquid and becomes soft.
3 Stir in the sugar, cardamom powder, and saffron strands. Mix well until the sugar dissolves completely. Add the fried cashews, raisins, and the remaining tablespoon of ghee, stirring thoroughly.
4. Cook the kesari bath for an additional 2-3 minutes until it achieves a smooth, pudding-like consistency. Serve warm or hot, garnished with extra cashews and raisins if desired.
