What You'll Need
Sambar
A South Indian essential made with toor dal, vegetables, tamarind, and a special spice blend. Perfect with idli, dosa, rice, or just a bowl of comfort.
Ingredients :
For Dal:
1. ½ cup toor dal (washed and soaked for 15 mins)
2. 1 cup mixed vegetables (drumstick, carrot, brinjal, pumpkin, etc.)
3. 1 small tomato (chopped)
4. ¼ tsp turmeric powder
5. 1½ tsp salt (adjust to taste)
6. 2½–3 cups water
To Add After Cooking:
7. 1½ tbsp tamarind pulp (adjust to taste)
8. 2 tbsp sambar powder
9. 1 tsp jaggery (optional, for balance)
For Tempering:
10. 1 tbsp oil or ghee
11. ½ tsp mustard seeds
12. 1 pinch hing (asafoetida)
13. 1 dried red chilli
14. 8–10 curry leaves
Procedure :
1. Add soaked dal, chopped vegetables, tomato, turmeric, salt, and water into the MultiCook.
2. Close the lid and select the 'Dal' preset.
3. Let the MultiCook complete cooking and allow the pressure to release naturally.
4. Open the lid, mash the dal slightly, and stir.
5. Add tamarind pulp, sambar powder, and jaggery (if using). Mix well.
6. Switch on Sauté Mode and simmer for 5–7 minutes for flavours to blend.
7. In a small pan, heat oil or ghee for tempering.
8. Add mustard seeds, let them splutter. Add hing, red chilli, and curry leaves.
9. Pour the tempering into the sambar and mix.
10. Serve hot with steamed rice, idli, or dosa.
