Tamarind rice
A traditional South Indian dish of rice flavoured with tangy tamarind, aromatic spices, and crunchy peanuts.
Ingredients :
1. Tamarind (soaked in warm water) 2 tbsp
2. Rice (cooked and cooled) 1 cup
3. Oil 2 tbsp
4. Mustard seeds 1 tsp
5. Urad dal (split black gram) 1 tsp
6. Chana dal (split chickpeas) 1 tsp
7. Dried red chillies 3 slit
8. Curry leaves 10 sprigs
9. Peanuts 2 tbsp
10. Turmeric powder 1/4 tsp
11. Red chilli powder 1 tsp
12. Jaggery 1 tbsp
13. Salt A pinch
15. Ghee 2 tsp
Procedure :
1. Wash the rice thoroughly. Cook them with 2 cups of water in a pressure cooker for about 2-3 whistles, or until soft. Keep aside (preferably a day old rice for better texture). After soaking, extract the pulp from tamarind and set it aside
2. Heat oil in a casserole and add mustard seeds. Once they splutter, add urad dal and chana dal, frying until golden brown. Add dried red chillies and sauté briefly, followed by curry leaves.
3. Add peanuts and sauté until roasted. Stir in the tamarind pulp, turmeric powder, red chilli powder, and jaggery. Cook for 2-3 minutes until the mixture thickens slightly.
4. Add the cooled rice to the tamarind mixture and mix gently to ensure the rice is evenly coated with the tamarind sauce. Adjust seasoning if needed. Drizzle ghee over the tamarind rice and serve hot with papad on the side for a complete meal.
