Tomato Basil Risotto
A creamy Italian-style rice dish infused with the tang of tomatoes and the aroma of fresh basil — made effortlessly in the MultiCook.
Ingredients :
1. ½ cup arborio rice (or short-grain rice)
2. 1 tbsp olive oil
3. 1 small onion (finely chopped)
4. 2 garlic cloves (minced)
5. ½ cup chopped tomatoes
6. 1 tbsp tomato purée
7. Salt to taste
8. ¼ tsp crushed black pepper
9. 1½ cups water or vegetable broth
10. 1 tbsp fresh basil (chopped)
11. 1 tbsp cheese of your choice (optional)
Procedure :
1. Switch on Sauté mode in the MultiCook. Add olive oil.
2. Add onion and garlic. Sauté for 2–3 minutes until soft.
3. Add chopped tomatoes and tomato purée. Cook until soft and combined.
4. Stir in the rice and mix well to coat with the tomato mixture.
5. Add salt, pepper, and water or broth. Stir once.
6. Cancel Sauté mode. Close the lid.
7. Select the Rice function and let it cook.
8. Allow pressure to release naturally.
9. Open the lid and stir in chopped basil and cheese (if using). and serve warm.
