Tomato Shorba
A classic Indian-style tomato soup, gently spiced with cumin, ginger, and coriander. Light, tangy, and soul-warming — perfect as a starter or light meal.
Ingredients :
1. 1 tbsp ghee or oil
2. 1 tsp cumin seeds
3. 1 small onion (finely chopped)
4. 1 tsp ginger (grated or chopped)
5. 4 medium tomatoes (chopped)
6. ½ tsp turmeric powder
7. ½ tsp red chilli powder (adjust to taste)
8. 1 tbsp fresh coriander stems (optional, for flavour)
9. 2½ cups water
10. Salt to taste
11. ½ tsp sugar (optional, to balance tang)
12. 1 tbsp fresh coriander leaves (for garnish)
13. ½ tsp garam masala (optional)
Procedure :
1. Switch on Sauté Mode in the MultiCook. Add ghee or oil.
2. Add cumin seeds. Once they splutter, add onion and ginger. Sauté for 1–2 minutes.
3. Add chopped tomatoes, turmeric, red chilli powder, coriander stems (if using), and salt. Cook for 2–3 minutes until tomatoes soften.
4. Add water and sugar. Stir well.
5. Cancel sauté mode. Close the lid and select the ‘Soup’ preset.
6. Once the cooking cycle completes and pressure releases naturally, open the lid.
7. Blend the soup using a hand blender until smooth.
8. Strain the soup (optional) for a silky texture.
9. Switch to Sauté Mode, add garam masala, stir for 1 minute, and turn off.
10. Garnish with fresh coriander and serve hot.
