Vegetable Kurma
Vegetable Kurma is a rich, creamy curry from Kerala made with mixed vegetables, coconut, and spices, perfect to go with a parotta or an appam.
Ingredients :
1. Mixed vegetables (carrot, potato, beans, peas) 1 1/2 cups, chopped
2. Onion 1 large, finely chopped
3. Tomato 1 large, chopped
4. Green chilli 1, slit
5. Ginger-garlic paste 1 tsp
6. Turmeric powder 1/4 tsp
7. Red chilli powder 1/2 tsp
8. Coriander powder 1 tsp
9. Garam masala 1/2 tsp
10. Salt To taste
11. Oil or ghee 1 tbsp
12. Curry leaves A few
13. Coriander leaves For garnish
For Kurma Paste
1. Fresh coconut 1/4 cup (grated)
2. Cashews 6 to 8
3. Fennel seeds 1/2 tsp
4. Poppy seeds (optional) 1/2 tsp
5. Green chilli 1
Procedure :
1. Blend grated coconut, cashews, fennel seeds, poppy seeds, and green chilli with a little water to make a smooth paste. Set aside.
2. In Casserole, heat oil or ghee. Add curry leaves, chopped onions, and green chilli. Sauté until the onions turn golden, then add ginger-garlic paste and cook until fragrant.
3. Add chopped tomatoes, turmeric, red chilli powder, coriander powder, and salt. Cook until tomatoes are soft. Then, add the chopped mixed vegetables and cook for a few minutes.
4. Add the prepared kurma paste and mix well. Pour in 1 to 1.5 cups of water and bring to a boil. Reduce heat, cover, and simmer until the vegetables are tender.
5. Stir in the garam masala and garnish with fresh coriander leaves. Serve hot with rice, parotta, or appam.
