Vegetable Stew & Neer Dosa

Vegetable Stew with Neer Dosa is a mild, creamy coconut-based curry made with mixed vegetables, served alongside soft, thin rice dosas for a wholesome meal.

Ingredients :

1. Mixed vegetables (carrot, beans, potato, peas) 1 1/2 cups (chopped)
2. Onion 1 small, chopped
3. Tomato 1 medium, chopped
4. Green chilli 1, slit
5. Ginger-garlic paste 1 tsp
6. Coconut milk 1/2 cup
7. Turmeric powder 1/4 tsp
8. Cinnamon stick 1 small stick
9. Cloves 2-3
10. Cardamom 1
11. Curry leaves A few
12. Oil or ghee 1 tbsp
13. Salt To taste
14. Coriander leaves For garnish

For Neer Dosa
1. Rice (soaked for 2-3 hours) 1 cup
2. Water 1 1/2 to 2 cups
3. Salt To taste

Procedure :

1. In a Casserole, heat oil or ghee. Add cinnamon, cloves, cardamom, and curry leaves. Sauté for a minute, then add chopped onion and green chilli. Cook until onions turn soft.
2. Add the mixed vegetables, ginger-garlic paste, and turmeric powder. Sauté for a couple of minutes, then add the chopped tomatoes and cook until they soften.
3. Pour in the coconut milk and enough water to cover the vegetables. Add salt and let it simmer on low heat for 10-12 minutes, until the vegetables are tender and the flavours meld.
4. For Neer Dosa - Blend the soaked rice with water to make a smooth, thin batter (like a pancake batter consistency). Add salt and mix well.
5. Heat Dosa Tawa on a medium heat. Pour a ladleful of the batter onto the hot pan, swirling the pan to spread it thinly. Cover and cook for 1-2 minutes on low heat, then gently remove the dosa.
6. Serve the neer dosa hot with the vegetable stew.
