Veggie-Loaded Quinoa Bowl
A protein-rich, wholesome bowl of quinoa and colourful vegetables — perfect as a balanced one-pot meal for any time of day.
Ingredients :
1. ½ cup quinoa (rinsed well)
2. 1 tsp oil
3. ½ tsp cumin seeds
4. 1 small onion (finely chopped)
5. 1 small tomato (chopped)
6. ¼ cup chopped bell peppers
7. 2 tbsp grated carrot
8. 1½ cups water
9. Salt to taste
10. ½ tsp black pepper or mixed herbs (optional)
11. Fresh lemon juice for finishing
12. Chopped coriander for garnish
Procedure :
1. Switch on Sauté mode in the MultiCook. Add oil.
2. Add cumin seeds and let them splutter.
3. Add onion and sauté until translucent.
4. Add tomato, bell peppers, and carrot. Sauté for 2–3 minutes.
5. Add rinsed quinoa, salt, and black pepper or herbs. Stir well.
6. Add water and mix. Cancel Sauté mode.
7. Close the lid and select the Grains function.
8. Allow the pressure to release naturally after cooking.
9. Fluff gently with a fork. Add lemon juice and garnish with coriander.
10. Serve warm as a light meal or lunchbox option.
